This is one of my favorite chai recipes - not too heavy on the spices. It's easy to make for the beginner.

8 tsp loose tea, usually black
2 piece of dry ginger
6 cardamom pods, crushed
6 whole cloves
2 piece of cinnamon stick
Milk and sugar to taste

In a sauce pan, break up the cinnamon sticks and chop the ginger into fine pieces. Boil 4 cups of water. Add tea leaves and the rest of the spices. Let it brew at a strong boiling for about a minute. Remove the heat and steep it for another minute. Strain out the tea and pieces of spice. Serve hot or cold with just a little bit of milk and/or sugar.

Serves 6 to 8
