I just found this recipe for vanilla chai. Substituted a 1 tsp vanilla extract and it's not bad. I also like the tea strong so I used 8 teabags (four 4 oz cups water) which made about 8 cups of chai total, when adding equal amount of milk.

black tea
4 cups water
3 cardamom pods
3 whole allspice
3 whole cloves
1 cinnamon stick
1-inch vanilla bean
About 1/3 cup honey
1 tablespoon black tea (or 4 tea bags)
Milk to taste (regular, nonfat, soy, or rice)

Put water in a saucepan with all spices. Simmer for 5 minutes, bring to a boil, and pour over black tea. Let steep for a few minutes. Add honey and milk to taste.

Still, I don't usually have time to make this myself. I like Third Street Chai's 'authentic' flavor, and I see they have a Vanilla one too. Have to try that next...

Anyone else have a favorite vanilla chai recipe that's easier to make in smaller amounts?
